Islim Kebap (Toothpick Kebap)


  • 4 units medium eggplant
  • 3 tablespoons

  • For the meatballs:
  • 500 grams medium-fat ground beef
  • 1 unit medium onion (planed)
  • 4 tablespoons breadcrumbs
  • 2 teeth garlic (crushed)
  • 1 unit egg
  • 1 teaspoon salt
  • 1 teaspoon chili peppers
  • 1 teaspoon cumin
  • 1 teaspoon black pepper

For the sauce:

  • 2 tablespoons olive oil
  • 2 pieces tomato (planed)
  • 1 tooth garlic (crushed)
  • 1/2 cup hot water
  • 1/2 teaspoon salt
  • 1 teaspoon black pepper

Minced beef with medium fat; You can mix some lamb with minced meat according to your taste, and have it grinded twice. After squeezing the grated onion, you can prepare meatballs without using the juice, and cook the meatballs that you do not add eggs after resting for a day. Meatballs that rest for a long time are much more delicious.

* Slice the eggplants, whose peel is peeled, with a sharp knife, into long thin strips. Soak in salt water to get the pain out.

* Put the medium-fat beef into the mixing bowl. Add grated nectarine, egg and breadcrumbs, garlic, salt, pepper, paprika and cumin.

* Knead the meatball mixture for about 10-15 minutes.

* Cut the meatballs into slightly larger pieces than six walnuts. Cook the meatballs that you roll in the palm by turning the backside in the pan.

* Strain the eggplant resting in salt water, rinse with plenty of water. Dry them with a paper towel. In a frying pan, fry the oil by turning it upside down. Remove excess oil with a paper towel.

* Cut the green peppers from the stems into four equal pieces. Cut the cherry tomatoes in half.

* Place two strips of fried eggplant on the serving plate to take the shape of a cross. Put one fried meatball in the middle and close it. Place a piece of green pepper and cherry tomatoes on it and attach it with a toothpick. Place all the meatballs in eggplant strips in the same way, then place them on the baking tray.

* For the sauce; Heat the olive oil in a small saucepan. Cook the grated tomatoes and garlic. After adding salt and pepper, boil for 4-5 minutes and take from the stove.

* Put the prepared sauce eggplants on the baking tray you received. Bake İslim kebabs in a preheated 180 degree oven for 30 minutes and serve hot.
