Tulumba Dessert (Tulumba Tatlisi)


  • 2 cups of water
  • 1 tablespoon of granulated sugar
  • 1 teaspoon of salt
  • 2 spoonful butter
  • 2.5 cups of flour
  • 3 eggs
  • 1 tablespoon of semolina
  • 1 tablespoon starch

For the syrup:

  • 2 cups of granulated sugar
  • 2 cups of water
  • 1 teaspoon of lemon juice

To fry:

  • 3 cups of sunflower oil


* To prepare the dessert syrup; Boil for 10-15 minutes over medium heat after mixing with water and granulated sugar. After adding the lemon juice, take it from the stove and leave it on one side.

* Mix water, granulated sugar, salt and butter in a saucepan, then boil it.

* Add flour on it, stir constantly and get a hard and sticky dough. Take it from the stove, let it cool.

* Break the eggs into the dough one by one and mix them into the dough by mixing. Add semolina and starch to the dough.

* Put the cooled dough in the cream squeezing bag with the 2-3 cm thick star tip attached.

* Put the sunflower oil in a deep saucepan. Squeeze about 5 cm of pieces of dough into the non-hot oil and let them brown until it turns color. When throwing the dough into oil, it is very important that the oil is cold.

* Transfer the browned desserts to cold syrup without waiting. Serve after taking the syrup to stand.
